# Directions:
01 - Char the red bell peppers over an open flame or under a broiler until skin is blackened. Place peppers in a covered bowl and allow to steam for 5 minutes. Peel off skins and remove seeds.
02 - In a food processor or blender, blend roasted peppers, tomatoes, garlic, red onion, chilies, smoked paprika, cumin, salt, and black pepper until mostly smooth.
03 - Add Greek yogurt and lemon juice to the mixture. Pulse until fully blended, adjusting seasoning as needed.
04 - With the processor running, drizzle in extra virgin olive oil to achieve a creamy, slightly thick consistency.
05 - Transfer dip to a serving bowl and garnish with fresh cilantro or parsley if desired. Serve alongside pita chips, crackers, or fresh vegetables.
