01 - Line an 8x8-inch baking pan with parchment paper to ensure easy removal.
02 - Combine rolled oats, almond butter, honey, melted butter, vanilla extract, and salt in a large mixing bowl. Stir thoroughly until a sticky dough forms, then press the mixture firmly and evenly into the prepared pan. Refrigerate the base to set while preparing the gummies.
03 - Pour fruit juice into a small saucepan. Sprinkle gelatin evenly over the surface and allow it to bloom for five minutes. Gently heat over low, stirring until gelatin is fully dissolved. Stir in the honey, then pour the mixture into a small parchment-lined dish. Chill in the refrigerator for 45–60 minutes until firmly set.
04 - Once the gummy slab is set, slice into small cubes using a sharp knife.
05 - Take the chilled oat base from the refrigerator. Evenly sprinkle the gummy cubes, freeze-dried fruit, and freeze-dried candy over the top, pressing lightly to adhere the toppings.
06 - Return the pan to the refrigerator for an additional 10–15 minutes to allow the toppings to set.
07 - Lift the set snack mixture out of the pan by grasping the parchment paper, then cut into 12 equal bars with a sharp knife. Serve and store in an airtight container.
