03 - 3.5 oz grated cheddar cheese or Swiss cheese

05 - Freshly ground black pepper, to taste

06 - 1 beaten egg for egg wash
# Directions:
01 - Set oven temperature to 400°F. Line a baking sheet with parchment paper.
02 - Unroll puff pastry onto a lightly floured surface.
03 - Spread Dijon mustard evenly over the pastry, if using.
04 - Arrange ham slices evenly over mustard, leaving a 0.4-inch border along one long edge.
05 - Sprinkle grated cheese over ham and season lightly with black pepper.
06 - Starting at the long edge without border, roll pastry tightly into a log, sealing edge with beaten egg.
07 - Cut the roll into 16 equal pieces using a sharp knife.
08 - Place pinwheels cut side up on prepared sheet, spacing slightly apart.
09 - Brush tops of pinwheels with beaten egg.
10 - Bake for 18 to 20 minutes until golden and crisp.
11 - Allow to cool slightly before serving warm or at room temperature.
