# Directions:
01 - Rinse rice under cold water. In a medium saucepan, combine rice, water, and salt. Bring to a boil, reduce heat to low, cover, and simmer until rice is tender and water absorbed (approximately 15 minutes for white rice, 35 to 40 minutes for brown rice). Fluff with a fork.
02 - Heat olive oil in a skillet over medium heat. Add frozen corn and sauté for 3 to 4 minutes until warmed. Incorporate black beans, cumin, smoked paprika, chili powder, salt, and pepper. Stir and cook for an additional 3 to 4 minutes until heated through and fragrant.
03 - Divide cooked rice evenly among four bowls. Top each bowl with the prepared bean and corn mixture.
04 - Garnish each bowl with cherry tomatoes, diced avocado, red onion, cilantro, shredded cheese, and sour cream if using. Add optional toppings like jalapeños, shredded lettuce, or salsa as desired.
05 - Squeeze fresh lime juice over each bowl immediately before serving to enhance flavor.
