Mac and Cheese Garlic Dough (Print Version)

01 - 2 3/4 cups all-purpose flour
02 - 1 teaspoon instant yeast
03 - 1 teaspoon sugar
04 - 1 teaspoon salt
05 - 3/4 cup plus 1 tablespoon warm water
06 - 2 tablespoons olive oil

→ Mac and Cheese Filling

07 - 1 cup elbow macaroni
08 - 2 tablespoons unsalted butter
09 - 2 tablespoons all-purpose flour
10 - 1 cup whole milk
11 - 1 cup shredded sharp cheddar cheese
12 - 1/4 cup grated parmesan cheese
13 - 1/2 teaspoon Dijon mustard
14 - 1/2 teaspoon garlic powder
15 - Salt and pepper, to taste

→ Garlic Butter

16 - 1/4 cup unsalted butter, melted
17 - 2 cloves garlic, finely minced
18 - 1 tablespoon fresh parsley, chopped
19 - Pinch of salt

# Directions:

01 - Combine flour, instant yeast, sugar, and salt in a large bowl. Add warm water and olive oil; mix until a soft dough forms. Knead on a floured surface for about 5 to 7 minutes until smooth and elastic. Transfer dough to a lightly oiled bowl, cover, and let rise in a warm area until doubled in size, approximately one hour.
02 - Bring water to a boil in a saucepan, cook macaroni following package directions, then drain. In another saucepan, melt butter over medium heat; whisk in flour and cook for one minute. Gradually add milk, whisking until the mixture thickens, roughly three to four minutes. Take off heat and stir in cheddar, parmesan, Dijon mustard, garlic powder, salt, and pepper until smooth. Fold in cooked macaroni and cool to room temperature.
03 - Preheat oven to 400°F. Line a baking sheet with parchment paper. Deflate risen dough and divide into 16 equal portions. Flatten each into a disc; spoon a heaping tablespoon of mac and cheese in the center. Gather edges to enclose filling and shape into a ball, placing seam side down on the baking sheet.
04 - Lightly brush dough balls with olive oil and bake for 15 to 18 minutes, until golden brown.
05 - While dough balls bake, combine melted butter, minced garlic, chopped parsley, and a pinch of salt in a bowl.
06 - Generously brush hot dough balls with garlic butter as soon as they come out of the oven. Optionally garnish with extra parmesan and parsley. Serve warm.
