# Directions:
01 - Preheat oven to 400°F and line a baking sheet with parchment paper. If using wooden skewers, soak them in water for 20 minutes to prevent scorching.
02 - In a large bowl, combine ground turkey, egg, panko breadcrumbs, green onion, ginger, garlic, soy sauce, sesame oil, and black pepper. Mix gently until just combined without overworking the mixture.
03 - Shape mixture into 16 to 20 uniform meatballs and arrange evenly on the prepared baking sheet.
04 - Bake meatballs for 15 to 18 minutes until golden brown and cooked through, ensuring internal temperature reaches 165°F.
05 - While meatballs bake, thread pineapple, bell peppers, red onion, and zucchini alternately onto skewers. Drizzle with olive oil and season lightly with salt and pepper.
06 - Grill or broil skewers for 8 to 10 minutes, turning occasionally, until vegetables are caramelized and tender.
07 - In a small saucepan, whisk together soy sauce, honey, rice vinegar, cornstarch, water, ginger, and garlic. Bring to a simmer over medium heat, stirring constantly until thickened, approximately 2 to 3 minutes. Remove from heat.
