# Directions:
- Wash and peel the cucumber and carrot. Slice the cucumber into thin long strips, the carrot into thin matchsticks, and the yellow bell pepper into thin strips.
- Place one cracker on a flat surface and spread a thin layer of cream cheese over it.
- Place a slice of cheddar cheese on the cracker, followed by several cucumber strips and a few carrot matchsticks.
- Top with a second cracker, spread cream cheese, then add a slice of Swiss cheese, some bell pepper strips, and two olive slices.
- Continue layering crackers with alternating cheese and vegetable toppings until five cracker layers are stacked.
- Insert a chive stem along the side to represent the giraffe's neck; place an olive slice on top as the head and two small carrot pieces as ossicones (horns).
- If needed, use a toothpick to stabilize the stack. Repeat the entire assembling process to create four stacks.
- Serve immediately to maintain the fresh texture.
