# Expert Advice:

01 -
  • They taste like you're sipping a mimosa but in the most fun, mess-free way possible.
  • Frozen fruit makes them naturally sweet, so you barely need any added sugar.
  • They look absolutely stunning in a glass, like you spent hours on them when really it's just blending and patience.
02 -
  • If you stir the wine too vigorously you'll lose the fizz, so resist the urge to be thorough and instead fold it in with the gentleness you'd use with whipped cream.
  • The space you leave at the top of each mold matters more than you'd think, because the mixture does expand as it freezes and you'll end up with popsicle overflow if you're too generous with the pour.
03 -
  • If you can't find sparkling wine or want to skip the alcohol entirely, use sparkling grape juice or even sparkling apple cider and you'll get the same festive fizz and beautiful color.
  • Freeze a small amount of the mixture in a regular ice cube tray first to test whether you want it sweeter before committing to filling all eight molds.
