05 - 1/2 cup unsalted butter, melted and slightly cooled
06 - 3/4 cup granulated sugar
07 - 2 large eggs, room temperature
08 - 1 teaspoon vanilla extract
09 - 1/2 cup cherry soda (regular, not diet)
10 - 1/2 cup sour cream or plain yogurt
→ Add-Ins
11 - 1/2 cup rainbow sprinkles (jimmies style, not nonpareils)
12 - 1/2 cup white chocolate chips (optional)
13 - 1/2 cup maraschino cherries, chopped and patted dry
# Directions:
01 - Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.
02 - In a medium mixing bowl, whisk together flour, baking powder, baking soda, and salt until evenly blended.
03 - In a large bowl, whisk melted butter and granulated sugar until fully combined. Add eggs one at a time, beating well after each addition, then incorporate vanilla extract.
04 - Stir in sour cream and cherry soda to the butter mixture until the batter appears smooth.
05 - Gently fold the dry ingredients into the wet mixture just until combined, avoiding overmixing.
06 - Fold in rainbow sprinkles, chopped maraschino cherries, and white chocolate chips if desired.
07 - Divide the batter evenly among muffin cups, filling each to approximately three-quarters capacity.
08 - Place tin in oven and bake for 16 to 18 minutes, or until a toothpick inserted in the center of a muffin emerges clean.
09 - Remove pan from oven and allow muffins to cool in the tin for 5 minutes. Transfer muffins to a wire rack for complete cooling.
